apple season

I have gotten two email blasts from different parenting sites I am subscribed with that both have mentioned that it is "Apple Season". Living so close to Julian we plan on taking Little Miss D up to check out the historic town to check out the apple orchards and have some apple pie!

To help get everyone in to the "apple mood" here is a great receipe a friend shared with me:

Apple Cake Recipe‏

1/2 C + 1 tbsp unsalted butter
3 Golden Delicious apples, peeled, cored and sliced into 1/4" thick wedges
2/3 C Flour
1/2 tsp baking powder
1/2 tsp salt
2 whole eggs + 1 yolk
1 tsp. vanilla
1 C. Sugar
confectioners sugar

Melt the butter in a pan. Take out 6 tbsp of the butter and move into another bowl. Cook the apples in the remaining butter until they are soft. Combine the baking powder, salt, flour and sugar into one bowl. Combine the eggs and vanilla with the reserved butter in another bowl. Add them to the bowl with the dry ingredients and blend them all together. Add the apples. Pour into the pan.

Cook in a 9" round buttered pan at 375 degrees for 30-35 minutes (my experience has been that this time is much shorter). Let cool for five minutes and turn out onto upside down onto the serving plate. Sprinkle with confectioners sugar.

Remember ... an apple a day ...
